Healthy Australia Day Lamington Recipe
January 25, 2016

The Australia Day BBQ is a summer staple filled with everything Aussie you can eat; from pavlova to meat pie and back again. It’s a great day to indulge, but if you’re looking for ways to make your favourite Australian treats a little more nutritious, check out our healthy lamington recipe!

This recipe is higher in protein and good fats than the original, replacing butter with macadamia oil and white flour with a buckwheat alternative. Australian Institute of Fitness nutrition expert Shivaun Conn notes that buckwheat flour is higher in protein than its white counterpart. Plus, macadamia oil is high in anti-inflammatory monounsaturated fats.
